If I select the "Restrict editing" option in my PDF target, the Permissions in the generated PDFs are set to "Changes Allowed: Filling in form fields and signing existing signature fields". I need this to be set to "None" instead.

Hi, me again ... It looks like it's possible to control the font using the matvariant attribute: <mml:mi mathvariant="sans-serif">R</mml:mi>.
But is there a better way? Specifically, is there a .css driven way of achieving the same result?
Any help/tips greatly appreciated.
