Yes, we saw the webinar live. It was very good, but it didn't do much to address why you would use one method over the other.

What is the best way to add non-bulleted or non-numbered items into a list?
I'm wondering what is the most compliant way to add paragraphs, etc. to lists.

Create a list item, and make it a paragraph item
Press [Enter] to create a note/non-numbered or bulleted item on the next line.
