Hey,
I jumped the gun and updated to R3 before I had the go ahead to do so - can I easily revert to R2 or is it a huge hassle?

It shouldn't be a big hassle. Have you got the installer for r2 still? If you do, after uninstalling r3, just reinstall r2. (If you don't have the r2 installer, you'll have to request it from MadCap.)
BTW, as a precaution, you may want to deactivate r3 before uninstalling it, just to make sure that you can reactivate r2. This might not be necessary, but I'd do it anyway.
