I have a Help project where the output type is HTML Help. When I open one of the topics using Internal Text Editor the first line shows:
encoding="utf-8"
But when I build the Help and choose 'View Source' on the same compiled topic, the first line shows:
encoding="Windows-1252"
And some characters such as the copyright and registered trademark symbol are replaced by small squares.
How do I ensure that my project is compiled using UTF-8 encoding?

Problem solved.
Our master pages had <meta> tag in the <head> specifying UTF-8 encoding. We removed this tag to leave an empty <head> element and everything now displays correctly.
