Getting started resources?

I just got a Central license and was interested in the cloud-based collaborative review capabilities. I've reviewed the Getting Started documentation. It's very feature centric. I need help with concepts and use cases. For example, I doubt our company is on board with publishing to servers they don't control. Can we have non-Flare users create and edit content using Central but continue to publish to our server using Flare?
