When an image is captured, it is always justified to the left most side of Capture. Is there any way to center the image? I would like to put text on the left side, but am not having luck.
Any ideas?

There isn't any "centering" -- the image is the only area you can take up. If you want to add callouts, etc. on the left side, simply add your callout, and then drag it over there. The canvas will expand so you have more room.
I should note that the canvas is *not* transparent (though it should be -- I have no idea why it's not). So when you use the image in your project, unless it matches your background color, you will see the canvas behind the callout.

I was more hoping to have the zoom effect feature face that direction instead of always going to the right side. I must come up with some crazy ideas for my documentation, although they don't seem crazy when I think them up. 
I'll have to try the callouts idea as you suggest.

You can do that. Select the zoom square (the small square that defines the area that will get magnified) and press F4.
On the Zoom Effect tab, change the X and Y offset values until the zoom looks the way you want it to.

I was in the same boat when I first started with it. Never having used a product like Snagit (we used an ancient version of HyperSnap), I never really expected more from my screen cap program than to do region captures. We did all of our callouts in Word (yes, we used Word for our non-help documentation). Discovering all th enice little things Capture could do for me was great (and I wish I had Capture v5, as it is even nicer than v4).
