The attached Paragraph structure bars seem to show up willy-nilly.
How can I make one or other other show up when *I* decide, rather than when fate decides?

The structure bar spacing has to do with your paragraph style formatting. Select the paragraph and look at your local formatting window. Most likely there is some margin or padding applied differently in one example than the other.
I can see that your second example has a different font applied, so it is likely there are other style changes there as well, which is causing it to eliminate spacing. The default paragraph has a bottom margin of 0.83em (per The W3).

I'm having the same issue with ordinary paragraphs - no classes whatsoever. When I edit those big space paragraphs and create a new one, the space reduces itself, only to return to big lateron.
I THINK, I'm having this since I inserted child selectors in the stylesheet, but I never got round to looking for the reason, because in the output everythings's fine.
